Bean Corn Avocado Salad

Bean Corn Avocado Salad

This recipe needs a shorter name, but trust me when I tell you, you should try it!!
Very healthy, very yummy! I'll give you the main ingredients, but you can add more of whatever you like best.
1 can of sweet corn
1 can of black beans
2 avocadoes
tomatoes  (cherry or regular)
1/2 red onion
cilantro
2 limes
salt

Drain corn, rinse beans and combine in bowl.
Peel avocado, dice in to 3/4" cubes and add.
Dice & add as many tomatoes as you like.
(I used about 20 cherry tomatoes and 3 small homegrown tomatoes)
Dice onion & chop cilantro and add.
Add juice from 2 limes to your mix
Add a dash of salt 
 Stir.


Variations include doubling the corn (I did that this time)
Adding more avocado, more lime juice, etc. 
I'm not a fan of beans so I try to disguise them in this to get my serving of legumes.

I love this recipe because it feels so healthy and fresh. It's filling and delicious. I've taken this dish to office potlucks, shared it with my family, everyone loves it, and you will too! :)

This is one of my favorite recipes from you! The only thing I've changed up is I add onion, green onion, and garlic.

Yes, I forgot the onion & cilantro. I will edit it now. :)
