Cheesecake Filled Strawberries

Today we have a blogger meetup! It is going to be all-things Pinterest. We are all bringing a Pinterest inspired food or drink, then we will make a Pinterest worthy craft! I'm looking forward to this!!

Here's my Pinterest inspired food...
Cheesecake filled strawberries! Yummmm!

I started by cutting off the leafy part and making a flat surface for the strawberry to sit.


Then I cut the strawberries into fourths **not cutting all the way through**

Lined them up nicely in my dish.

Time for the filling!
8 ounces of cream cheese (I used the 1/3 less fat)
4 or more tsp of powdered sugar (to taste)
2 or more tsp of vanilla (to taste)

Mix well with beaters.

Fill it up into a ziplock baggie.



Trim the corner off and you've got yourself a pastry bag!

I used a table knife to hold the strawberry open while I tried to fill it.



Sprinkle on some graham cracker crumbs and you're done!

Refrigerate before serving so filling stays thick!


**Optional topping - drizzle chocolate on top.
**Option filling - store bought cheesecake mix-I just happened to have all the ingredients for the real thing.
